Our story · Ledbury

A family farm, in Ledbury, since 2017.

Hollow Oak Cider is Ruth Pembridge and family: four people on a farm in Ledbury, Herefordshire, making cider since 2017. Dabinett and Yarlington Mill apples go to the press, and the pears come from perry trees eighty years old.

One rule runs through all three ciders: real juice, 100%, no concentrate. Most supermarket cider is 35% juice and water. Ours is fruit, fermented, and it ends up dry, floral or wild depending on the can.

It leaves the farm by the case, twelve 330ml cans at a time. Free UK delivery over £50.

No. 01 Orchard Dry

Grip, not sweetness

Dabinett and Yarlington Mill are bittersweet apples: heavy on tannin, light on sharpness. Their juice goes in whole, nothing else with it, and the cider ferments out bone dry. What you taste is the tannin, firm from the first mouthful to the last.

No. 02 Perry Gold

Eighty years of perry

Perry is pear cider: the same craft, a different fruit. Ours comes from perry trees eighty years old, and the juice comes out soft and floral. In 2025, Perry Gold was awarded Great Taste 2 star.

No. 03 Wild Ferment

Left to the wild

No cultured yeast here. The ferment starts with wild yeast, then the cider rests in barrel for nine months before it is canned. It comes out funky and unlike the other two. Owen Price said it tastes like an orchard after rain.
